Maple BBQ Turkey

Ingredients

  • 1214 lb turkey or large roasting chicken
  • 1½ cups Everything Maple BBQ sauce (or Yikes! for more heat)
  • 1 cup water

Instructions

Make a pocket between the skin and the flesh of the bird by sliding your hand between the layersthe deeper the pockets, the better. Fill the pockets with our Maple BBQ sauce. Cook on a vertical roaster if possible (an empty soda can filled with water works as well). Pour the water into the bottom of the drip pan, and barbeque on the grill on low for 15 minutes per pound of meat, or cook in the oven at 325F. Mix the remaining sauce with the pan drippings, skimming off any unwanted fat. Allow the turkey to rest for 15 minutes, then carve the meat and place it back into the dripping pan. Allow the meat to warm thoroughly and serve.

Toss veggies together with dressing, ensuring they are nicely coated. Roast in the oven or on the grill at 350F for 40 minutes.
The savoury caramelized glaze will make your mouth sing!

Crab Dip, Maple Style!

  • 1 cup crab meat (frozen imitation crab is fine)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Miracle Whip or mayo
  • 1/4 cup Maple Horseradish Jelly

Instructions

Mix all the ingredients and place in an oven-proof dish. Bake at 350F for 15 minutes, or until bubbly. Garnish with parsley and serve hot with your favourite crackers or pita triangles.
Yummy hot or cold!

Baked Brie

Instructions

Always a crowd pleaser, this appetizer can be dressed up or kept casual. Start with an ovenproof dish, preferably close to the size of the brie wheel you are using. Pour your favourite topping over the brie, heat through for approximately 15 minutes at 350F, and serve with crackers, naan bread, or pitas.

Savoury toppings: Maple Caramelized Onions, Maple Sweet Onion & Feta, Maple Mango Chutney, Maple Fruit Chutney.
Traditional toppings: Maple Red Pepper Jelly (Hot or Regular), Maple Cranberries, Maple Berries Vinaigrette.
Funky toppings: Maple Horseradish Jelly, Maple Pomegranate Fig, Maple Pineapple Mango Jam, Maple Fig Compote with Sauvignon Blanc, Maple Mushroom & Olive Tapenade.

To dress up your brie: Cut 8 layers of phyllo pastry into squares twice as wide as the cheese. Brush each layer with melted butter and arrange them slightly off-centre, creating a pointed circle. Place the brie in the centre and twist each corner up and around the cheese, leaving the centre clear to form pastry roses. Bake for 30 minutes. Alternatively, use croissant dough: arrange the triangles in a circle, place your brie in the centre, bring each triangle up to cover the cheese, and bake for 20 minutes at 350F.
